Red wine Passito “Ardite Gocce”.

This is the sweet wine that takes its name from the traditional drying method or from the subsequent withering prolonged or extreme.

 

The choice of harvest, the Enantio grapes , and storage of the same, are identical to those undertaken by the Red Fenilon, but it differs in the duration of the drying that is extended until the grapes in them have reached a consistency such that each cluster during the pressing produces a few drops of essence that has a sugar content usually ranges from 26-28 degrees babo.

 

In favorable period of the year the fermentation is induced and occurs with selected yeasts at a controlled temperature (18 ° C) by means of the heat pump; in this way the direct control enables a very prolonged fermentation in contact with the skins to extract as much as possible from them.

 

Subsequent storage in steel tanks will allow then the product  a slow stabilization and a non-invasive technique to preserve the qualities of delicacy.

• Colour:   Intense ruby red with violet - purple. clear.

• Evaluation of taste and smell: : Of considerable olfactory intensity due to the extra-ripe berries and prunes; in the mouth is not attractive for a high alcohol content, but for its sweetness combined with fruity content.

It’s ideal after a meal paired with sweet with his presentation in bottles 0,375ml. it may make it  attractive to customers  who ,at the end of an important dinner , do not want to miss that extra  sensation of the Fenilon tastes.
